Trans fat is formed when vegetable oils undergo hydrogenation, an industrial process that adds hydrogen to vegetable oil so it becomes solid at room temperature. This process makes fat more stable and less likely to spoil, giving foods made with it a longer shelf life. This type of fat is extra dangerous because it doesn’t just increase bad cholesterol, but lowers good cholesterol as well.

Identify trans fat by looking for partially hydrogenated vegetable oil or shortening in the ingredients list. Instead, opt for un-hydrogenated oil such as olive, coconut oil, canola oil.

Preservatives are natural or synthetic chemical substances added to food products to prevent decomposition. They act as a shield against spoilage caused by microbial growth (like bacteria, yeast, and mold) and chemical changes (such as oxidation, which makes fats go rancid). Ultimately, their main job is to extend shelf life and ensure the food remains safe and appealing to consume over time.

Spotting preservatives requires a quick glance at the Ingredients List on the back of the packaging. Here is how to hunt them down:

  • Spot the Chemical Suffixes: Many synthetic preservatives end in -ate (like sorbates, benzoates, and propionates) or -ite (like sulfites).
  • Recognize E-Numbers / INS Numbers: In many regions (like Europe, Australia, and parts of Asia), additives are listed as numbers. Preservatives generally fall into the 200–299 range, while synthetic antioxidants (which prevent chemical spoilage) often fall into the 300–399 range.

  • BHA (Butylated Hydroxyanisole) / E320
  • BHT (Butylated Hydroxytoluene) / E321
  • Tocopherols / E306 (Vitamin E, a more natural antioxidant alternative)

Stabilizers and Anti-Caking Agents

  • Sodium Polyphosphate / E452 (Stabilizer)
  • Silicon Dioxide / E551 (Anti-caking agent that keeps the powder free-flowing)
